With a couple of 500s you aren't likely to get over 600MHz, which won't be a huge increase in speed as the FSB will still be quite low. The trick is to increment the FSB and see where it's stable, then increment the core voltage a tad (though taking it too high will fry your CPU). It varies hugely from processor to processor, so you just have to use trial and error - read around on the site for details of how to fix any problems.

just put two good TEC units, nice waterblocks, water cooling setup with refrigeration liquid and you are off to the road to 650-700MHz
