Deleting "My Documents"???

You can Rt-Click the system folder "My Documents" & adjust the properties to point to whatever location on your PC/LAN you prefer.

Just to add to LedFord's reply, in older Windows operating systems you can use TweakUI to change the target of My Documents and other system-created folders.
